Virginia's Famous Dutch Oven Pot Roast
Prep is easy with leaving skin on veggies and cutting them in large pieces such as halved and quartered. You don’t want your veggies too small in this roast recipe.
I do this in my cast iron Dutch Oven but this can be done in a regular roasting pan by simply using a good skillet to sear the roast in first, then transfer to the roasting pan along with the juices and tallow from searing.
